Our latest collection comes from the Andalusian highlands of Huelva, land of the best acorn-fed Ibérico ham. Here, Jose is the last master craftsman who knows and applies the technique of cucharillas -small spoons in Spanish-, with which he makes these marbled pieces that became popular in this region in the early 70s. Let's hope that José will find apprentices to whom he can pass on the legacy, because if not, this technique will disappear from our geography.
